Conventionally, coffee is picked, removed from its fruit and then dried in the sun. If you leave some of the fruit on the 'beans' when you sun-dry it, that fruit 'melts' over the coffee locking in its flavor and adding a touch of sweetness. The effect is impressive and tasty. That's why these coffees are rated so highly. It had never been done in Nicaragua when we started. That was the birth of the Honey-Bear Reserve.
